Vegetable Chile, or, Chili-non-Carne

Saute until softened in olive oil:

    1 large onion, chopped
    2 cloves of garlic, crushed
    2 stocks of celery, chopped

Add:

    1 tablespoon dry ground cumin1 teaspoon cayenne (or to tasted)
    salt and pepper

    275 grams sweet corn kernels-fresh, frozen or tinned
    depending on season and taste:
    500 grams cooked kidney beans
    400 grams chopped tomatoes
    1/2 litre water

When vegetables are almost done add:

    1 green pepper chopped
    1 red pepper chopped
    1 yellow pepper chopped
    2 tablespoons of chopped fresh corriander

Serve with crusty bread
